After a long day of tastings, what drink do you kick back and relax with?

Well, after a really long day, nothing quite hits the spot like a beer (something light like a pilsner or a kölsch) A less exacting tasting? A glass of champagne is always welcome.

If you were a grape variety, what would you be, and why?

That's a tough one. I'm tempted to say Pinot Noir because I love it but don't think I'm quite that seductive - or capricious. I think it would have to be Syrah - as opposed to Shiraz. Strong, vibrant and a bit edgy (or that's what I like to think!)

Briefly describe the best restaurant experience you've had recently.
It would have to be Noma in Copenhagen which really lives up to the hype. I first went three years ago and didn't expect it to be better than that but it was. Fascinating, clever, delicious food without being pointlessly innovative. And a beautiful location. Just a delight.

In your opinion, which are the most underrated and overrated wines in the marketplace?

Overrated has got to be top-end Bordeaux which is now fetching silly money. I'm not a big fan of icon wines generally. And despite the fact I like it a lot of champagne is overpriced. Underrated? I would say natural wines which everyone tends to tar with the same brush of being weird and funky. I also suspect there's a fair amount of good wine coming out of Hungary these days we don't hear much about.

What is your earliest wine memory?

Decanters of sherry in my parents' sideboard. No wonder it took me a long time to come round to it.

What is you Desert Island wine and food pairing?

Well there's probably likely to be a fair amount of fish round the island so I'll go for a case of Albarino. (And a working fridge)
